Olaj means Oil in Hung., Olajos, a moderately frequent surname, close to 500 listed in present day Hung. phone directory, could be occupation based, meaning somebody in some form involved with oils, also could be a descriptive name for people with darker skin color.
Olajossy is a nobility type name, although couldn't find any specifics for it. This type of names evolved from the like archaic Olajosf(f)y, meaning son of Olajos. The Hung. phone directory doesn't have listings for either of them.
