Somewhere in my research I saw information on lines of Gillich/Gillick in Scotland and Ireland. My wife's family is from Scotland so have been doing alot of research on her side as well.
My line of Gillichs were living in Kuelsheim, Mosbach, Baden, Germany back to at least the early 1600's. My 4x ggfather left there around 1754 and settled in the Sanktanna area (of Hungary/Romania). Sanktanna is part of the Banat region in Hungary/Romania which has quite a few forums dedicated to it. Let me know if any of these areas are familiar.
I haven't come across a 'Jorge' but of interest, Gyorgy is the Hungarian version for the German name Georg. Does your Grandfather's birth certificate show what area of Germany he was born in? I have accumulated some information on different Gillich families in Germany and elsewhere.

Just found info one of the Scotland Gillick families: William Charles Gillick, born 1881, Cuilhill(?), Scotland; married Elizabeth Edgar; five children: Lawrence, Sadie, Elizabeth, Joseph (Joe) and Jim. Lawrence settled in Canada. No more info on other children.
